Fresh Ribbonfish
$10.00
About this item
Long, ribbon-thin fish with a bright silver skin that darkens to a steely grey along the back. Cut into generous segments, the flesh inside is pale and firm with a clean, faintly sweet flavour and very few bones. It holds together well in the pan, which makes it ideal for shallow-frying until the edges crisp, or for braising with ginger and a little vinegar.
